As we start a brand new year, many of us turn to healthy eating and exercise to help us start fresh after the festive season, and to perhaps shed a few pounds that may have crept on Christmas (your secret is safe with us!)

January is also the month of ‘Veganuary’ where many people commit to a vegan diet for the month of January, not eating meat or any item produced from an animal, including milk and cheese.

We all hope that 2021 brings us all some much-needed positivity, happiness and clarity as well as time with family and friends. Setting resolutions and goals is something that many of us turn to at this time of year and like many, we are choosing to make better choices in January, and this includes our meal choices and sneaky snacking habits!

Here, we share a selection of our favourite winter warmer recipes that will help you to feel full and satisfied as well as being healthy and nutritious to kickstart the new year.

Roasted red pepper, sweet potato & smoked paprika soup
Soups are great to have whilst your working from home with warm crusty bread but also make the perfect accompaniment for a pit-stop on a long winter’s walk. Roasting vegetables for a soup is the best way to bring out their flavour and also is a great way to give you a winter boost of some vitamins too!

Slimming World Penne Arrabbiata
This simple dish will please the whole family and is super easy to make but super delicious too! This recipe is also vegan, making it perfect for anyone taking part in Veganuary this month. Either pick up the sauce from Iceland supermarkets, or create the sauce at home and add pasta and roasted vegetables – it couldn’t really be any easier.

This veggie packed dish is sure to fill you up not only with delicious spicy Southern flavours but is also packed with vitamins and nutritious value. Also vegan, this recipe also used Quorn pieces, giving you plenty of protein without using meat. We’re definitely going to give this one a go.
